The Horn is West Hollywood’s first steakhouse bar and lounge specializing in American-sourced wild game - along with a variety of sumptuous steaks, premium wines and cocktails, and Internationally inspired bistro dishes.
Spearheaded by executive chef Aaron Mitrano (previous sous chef to Gordon Ramsay) and manager/owner Adam Klesh (Industry Bar New York, Sidewalk Cafe New York, Tortilla Republic West Hollywood); the team are set to bring a New York flavor to suit the Weho crowd - with plenty of delicious vegetarian & gluten free options, and late-night hours (kitchen open until 2am).

The Horn’s Executive Chef Aaron Mitrano is a purebred Angelino through and through. Born in San Pedro to an Italian father and an American mother, Aaron fell in love with cooking from an early age – his father was a master in the kitchen cooking country style food and it was his father who first introduced him to game food. His father baked fresh bread every day, he was an inspiration to Aaron from the get go.
At 15 years old, Aaron began as a bus boy at a restaurant called the Heritage Family Pantry in Lakewood, CA. The owner Tony really inspired Aaron’s work ethic. Tony taught him what it meant to put in a full days’ work – being there before everyone else and staying well after closing time. Some of his drive was born through close shadowing of Tony over the three years he spent at the restaurant whilst graduating high school – Aaron went to school during the day and he worked there at nights.
Following a spate at culinary school at the age of 20, Aaron’s interest in fine dining grew as he began work at Anisette under Alain Giraud. Working under Alain was where Aaron really grew his love of the produce and the ingredients - placing them at the forefront of the dishes and taking care with the produce – inspecting everything carefully as it came into the restaurant. The Chef Du Cuisine at the time Joshua Smith taught Aaron how to use herbs and spices – the art of seasoning, and how to implement these effectively into recipes.
At the age of 25 Aaron had a short Line Cook stint at Craft (Century City), before moving to Colorado for a year – working as a Sous Chef for a restaurant called the Rustic Oven. Aaron worked under David Nigle, who really helped Aaron to develop his management style - helping him to run 2 restaurants with precision. Being at the Rustic Oven grew Aaron’s obsessions with game meat even further – with dishes on the menu like rabbit and lamb.
Shortly after meeting his future wife in Fort Collins CO, Aaron picked up sticks with her and moved back to California where he began with SBE – working as an Executive Sous Chef in their events catering department – catering events such as The Emmys, The Grammys, and Elton John’s Oscar’s party. Aaron then went to work for the One Group as Chef Du Cuisine – managing STK and Bagatelle (West Hollywood) - running the day-to-day operations for both high-end restaurants.
This new-found discipline for entertaining high clientele is what then led Aaron to work as a Sous Chef for Gordon Ramsay at Gordon’s Los Angeles restaurant The Fat Cow - situated at that time at The Grove. Working for Gordon solidified Aaron’s standards in food – pushing him to be the best at everything he could be. There is no compromising in Gordon’s world on standards or on technique.
In late 2012, Aaron sat down with Adam Klesh to kick-start initial ideas for a brand new restaurant. They began conceptualizing the potential menu items and their visions & concepts for this new ‘restaurant’. Adam’s vision for a NY-style Steakhouse united with Aaron’s love of game meat; The Horn West Hollywood was born.
Aaron lives in West Hollywood with his wife Noel and his daughter Marley.
